Butterfly popcorn is more fragile with less surface area and when you’re mixing the corn with the liquid, the popcorn tends to break into smaller pieces. Mushroom popcorn, on the other hand, creates a large poof and allows for more surface area to be coated with the sweet, caramel candy flavor.
As for the caramel, there are many options and flavor profiles out there. Overall, the key to flavorful caramel popcorn is to make sure the caramel has the right consistency. Too thick and the caramel will clump, to thin and it runs off the popcorn into the bottom of the bowl.
